Peel and quarter apples, remove core. Cut quarter into pieces and sprinkle with lemon juice. Boil up the apple juice. Cover apples and cook for about 10 minutes. Mix sauce powder with a little water until smooth.
Add sugar to the apples and mix. Thicken the apple compote with the mixed sauce powder, bring to the boil and allow to cool. Mix eggs, milk and salt. Grease a casserole dish. Put 2/3 of the apple compote into the baking dish and place the slices of bread on top.
Spread the rest of the compote around the slices. Pour egg milk over them. Leave in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 30 minutes. Lightly roast the hazelnut flakes in a pan.
Sprinkle raisin bread - apple - Michel with hazelnut leaves. Dust with icing sugar and serve decorated with mint.
