Quick sauces with white asparagus

Ingredients

  • 100 g Bacon cubes
  • 1 TABLESPOON Oil
  • 450 g finely diced tomatoes
  • 2 TABLESPOONS Balsamic cream
  • 7-10 Tbsp salt, pepper, sugar
  • 1/2 bunch Basil
  • 3 h
  • 2 Egg Yolk
  • 300 g mayonnaise
  • 2 TEASPOONS Mustard
  • 2 TABLESPOONS Olive oil
  • 1/2 bunch chopped parsley
  • 1/2 bunch chives cut into small rolls
  • 7-10 Tbsp salt, pepper

    Bacon tomato sauce: Fry 100 g bacon cubes crisply in 1 tbsp. hot oil. Fry 450 g finely diced tomatoes briefly. Stir in 2 tablespoons of balsamic cream and season to taste with salt, pepper and sugar. 1⁄2 Finely chop the bunch of basil and stir in.

    Bolzano sauce: Halve 3 hard boiled eggs. Pass 2 egg yolks through a sieve, mix with 300 g salad mayonnaise, 2 teaspoons of mustard and 2 tablespoons of olive oil. Chop the rest of the eggs, add 1⁄2 bunch of chopped parsley and chives in small rolls. Season to taste with salt and pepper.
