Quick glazed apricot-garlic chicken

Ingredients

Servings: 4
  • 4 Chicken filets (à approx. 175 g)
  • 4-5 Tbsp Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 Garlic cloves
  • 2 TABLESPOONS Apricot Jam
  • 8 discs Baguette bread (approx. 15 g each)
  • 50 g Raclette cheese
  • 1 Onion
  • 1 (approx. 750 g) Pointed cabbage
  • 10 g clarified butter
  • 7-10 Tbsp Marjoram

Directions

    Wash the meat and dab dry. Heat 2 tablespoons of oil in a frying pan, fry the meat for about 15 minutes, turning it, and season with salt and pepper. Meanwhile peel garlic. Chop a clove of garlic very finely and stir into the jam.

    Rub slices of bread from both sides with the whole clove of garlic. Sprinkle evenly with 2-3 tablespoons of olive oil. Grate cheese finely. Peel onion and chop finely. Clean, wash and halve the cabbage, cut out the stalk. Cut cabbage into fine strips

    Place the meat side by side in an ovenproof dish. Spread with apricot-garlic jam and sprinkle with cheese. Place the casserole dish on one side of a baking tray. Place slices of bread next to each other on the free side of the baking tray. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for 6-8 minutes

    In the meantime heat clarified butter in a wide pot, fry onions in it until translucent. Add cabbage and fry over medium heat for about 5 minutes, turning. Season to taste with salt and pepper. Garnish chicken with marjoram as desired. Add cabbage and bread
