Dab meat dry and cut into strips. Peel and grate ginger. Mix the meat, ginger, soy sauce and 2 tbsp. oil and cover and chill for approx. 30 minutes. Roast sesame seeds in a pan without fat, remove
Clean the beans and sugar snap peas. Cook the beans for about 8 minutes in boiling salted water. Add sugar snap peas approx. 2 minutes before the end of the cooking time. Drain vegetables and rinse under cold water
Put the meat in a sieve and collect the marinade. Peel and halve the onion and cut into strips. Heat 1 tablespoon of oil in a wok. Sauté onion and vegetables for about 2 minutes. Add meat and fry for another 2 minutes. Add the marinade, bring to the boil briefly, season with pepper and arrange everything on plates. Serve immediately sprinkled with sesame seeds
