Potato salad with chicken and cooked ham

Ingredients

Servings: 4
  • 1 kg waxy potatoes
  • 2 small onions
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 5 TABLESPOONS Mayonnaise (50 % fat)
  • 2-3 TABLESPOONS Oil
  • 1 (approx. 900 g) small fried chicken
  • 100 g cooked ham
  • 1/2 Cucumber
  • 2 hard-boiled eggs
  • 1 collar Chives
  • 1 small lettuce

Directions

    Wash the potatoes and cook them in plenty of water for 20 minutes, remove the skin and let the potatoes cool down. In the meantime peel and finely dice the onions. Mix vinegar, salt, pepper, onions and mayonnaise and finally add the oil. Cut the potatoes into thin slices. Cover with the marinade and leave to stand for about 30 minutes. Skin the chicken, remove the meat from the bone and cut it into not too large pieces. Cut ham into wide strips. Wash cucumber and dice finely. Cut the eggs into six with an egg slicer or knife. Wash chives and lettuce, drain well. Cut chives into fine rolls. Add the salad ingredients to the potato slices and mix well. Let the lettuce stand for about 30 minutes. Remove a few large leaves from the lettuce and line the salad bowl with them. Arrange the potato and chicken salad in the bowl. Serve with fresh pretzels
