Potato salad with bacon

It tastes just like Grandma's: the marinade of bacon, broth and vinegar makes this traditional potato salad so particularly delicious. Chives give it an additional fresh spice.

Ingredients

Servings: 4
  • 1.25 kg waxy potatoes
  • 1 medium onion
  • 100 g streaky smoked bacon
  • 2 TABLESPOONS Oil
  • 1/4 l clear beef stock (instant)
  • 60-80 ml White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 collar Chives
  • 8 (approx. 400 g) small wieners

Directions

    Wash the potatoes thoroughly and cook in plenty of boiling water for about 20 minutes.

    In the meantime peel and finely dice the onion. Cut the bacon into fine cubes as well. Drain the potatoes, rinse them under cold water and let them drain. Peel the skin. Cut potatoes into slices.

    Heat the oil in a frying pan and let the bacon in it go crisp. Add the onions. Add stock and vinegar, heat briefly and pour the hot marinade over the potatoes. Season with salt and pepper and mix everything well. Let the potato salad with bacon cool down for at least 1 hour and let it soak through.

    Wash the chives, dab dry and, except for a little to garnish, cut into small rolls. Mix the chives into the infused salad and season again with salt and pepper.

    Heat the sausages in plenty of water. Arrange potato salad with bacon on plates and garnish with chives. Serve with the hot sausages.
