Wash, clean and cut the strawberries into pieces. Boil up cherry juice, 5 tablespoons of water and lime juice. Add brown sugar, stir starch with 2 tablespoons of water until smooth. Bind the juice with it, bring to the boil briefly.
Stir in the strawberries and let it cool down. Peel, wash and roughly grate the potatoes. Mix grater with egg yolk and season with salt. Heat oil in a coated pan and fry 3 Rösti over medium heat, turning once.
Arrange rösti and strawberry compote on a plate, garnish with mint.
