Potato and Vegetable Pan

Ingredients

  • 250 g Potatoes
  • 1 tsp (5 g) Oil
  • 7-10 Tbsp salt, pepper
  • 200 g Broccoli
  • 1 (approx. 150 g) large carrot
  • 1 Onion
  • 1 Egg (Gr. S)
  • 7-10 Tbsp some chives

Directions

    Peel, wash and slice the potatoes. Heat oil in a coated pan. Fry the potatoes at medium heat for about 15 minutes until crispy. Season with salt and pepper

    Clean and wash broccoli and cut into florets. Peel, wash and chop the carrot. Cover the vegetables and cook them for about 5 minutes in little boiling salted water

    Peel and finely chop the onion. Add to the potatoes and fry for another 5 minutes. Drain the vegetables and also fry them briefly

    Whisk the egg and 1-2 tablespoons of water. Season with salt and pepper. Pour into the pan and let it set, turning from time to time. Wash and finely chop the chives and sprinkle over them.
