Swiss potato salad

Ingredients

  • 200 g Potatoes (from the previous day)
  • 100 g Carrot
  • 100 g Courgette
  • 30 g Semi-hard cheese (20-30 % fat)
  • 70 g Cream quark (2 % fat)
  • 1-2 TEASPOONS Lemon juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Cayenne pepper
  • 1-2 TEASPOONS Capers
  • 7-10 Tbsp Parsley

Directions

    Cut the potatoes into cubes. Peel carrot and cut into fine sticks. Clean, wash and cut the zucchini into small cubes. Cut cheese into small triangles. Mix quark with lemon juice.

    Season to taste with salt and cayenne pepper. Stir in the capers. Mix the salad ingredients and place on a plate. Pour sauce over it. Serve garnished with parsley.
