Potato and sauerkraut stew

Ingredients

  • 750 g Potatoes
  • 1 small red, green and yellow peppers
  • 2 medium-sized onions
  • 200 g Cabanossi
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 3/4 l clear meat broth (instant)
  • 200 g Sauerkraut
  • 7-10 Tbsp Sweet peppers
  • 150 g Fresh cream
  • 7-10 Tbsp Parsley

Directions

    Peel, wash and roughly dice the potatoes. Peppers clean, wash and cut into strips. Onions peel, in columns cut. Cut Kabanossi into slices. Heat oil in a pot and fry the sausage slices crispy while turning them.

    Take it out, put it aside. Fry the onion slices and pepper strips in the frying fat. Finally add potato cubes and also fry them. Season everything with salt and pepper and deglaze with the broth.

    Bring to the boil, cover and cook over medium heat for 20 minutes. In the meantime, roughly chop the sauerkraut. During the last 5 minutes add sauerkraut and sausage to the stew. Season potato soup with salt, pepper and sweet paprika.

    Serve in preheated plates. Garnish with crème fraîche and parsley.
