Ingredients

  • 1 kg Kale
  • 125 g Onions
  • 250 g baby potatoes
  • 250 g Teltow Turnip
  • 40 g clarified butter
  • 7-10 Tbsp Salt
  • 100 g Sugar
  • 500 g tripped chop of Kasseler
  • 2 Cabbage sausages
  • 7-10 Tbsp Pepper
  • 1 TEASPOON medium hot mustard

Directions

    Clean the kale, brushing it off the stalks. Wash and roughly chop. Peel and chop the onions. Peel and wash potatoes and turnips. Heat the lard, fry the potatoes and turnips for ten minutes, turning them and season with salt.

    Sprinkle with sugar, toss again in the cooking fat and set aside. Sauté onions and kale in the frying fat. Deglaze with 1/2 litre water and cook for 1 1/2 hours. In the meantime wash the pork loin.

    Add the Kasseler to the kale 40 minutes before the end of the cooking time. Add the potatoes, turnips and cabbage sausages 15 minutes before the end of the cooking time. Season to taste with pepper and mustard. Cut the smoked pork loin and cooked sausage into slices and serve everything together.
