Ingredients

  • 2 medium-sized onions
  • 2 Carrots
  • 1 (approx. 1.2 kg) Pork roll roast
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 1/2 bunch Parsley
  • 4 TABLESPOONS Oil
  • 3 TABLESPOONS medium hot mustard
  • 1 (150 g) sour apple
  • 1 TEASPOON dried marjoram
  • 1 glass (720 ml) Red cabbage
  • 1 TABLESPOON Sauce thickener

Directions

    Peel 1 onion and cut it roughly into pieces. Clean and peel the carrots and cut them into pieces. Wash the rolled roast, dab dry and place on the fat pan of the oven. Season with salt and pepper. Spread onion and carrots around it. Roast in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 1 1/4 hours.

    Gradually add approx. 1 litre of water during the entire roasting time. Peel and halve 1 onion and cut into thin slices. Wash parsley, dab dry and chop finely. Mix onion, parsley, 3 tablespoons of oil and mustard. Remove roast from the oven. Pour frying stock with onion and carrots through a sieve, catching the stock. Remove kitchen string from the roast. Put the roast back on the fat pan. Spread the onion-mustard mixture over the roast and spread. Bake in the oven at the same temperature for another 30 minutes. In the meantime, peel, quarter and core the apple and cut into cubes.

Add red cabbage and heat covered for 6-8 minutes. Bring the frying stock to the boil, stir in the sauce thickener and simmer for 1 minute. Season to taste with salt and pepper. Cut the roast into slices and serve with sauce and red cabbage. Boiled potatoes taste good with it

Bring the frying stock to the boil, stir in the sauce thickener and simmer for 1 minute. Season to taste with salt and pepper. Cut the roast into slices and serve with sauce and red cabbage.
