Ingredients

  • 100 g soft butter
  • 80 g demerara sugar
  • 75 ml Sugarcane syrup
  • 1 egg (size M)
  • 275 g Flour
  • 1/2 TEASPOON Sodium powder
  • 1/2 TEASPOON Baking Powder
  • 1 Mesp. salt
  • 3 TSP Gingerbread spice
  • 1 Protein (size M)
  • 200 g Icing sugar
  • 1-2 TABLESPOONS Lemon juice
  • 7-10 Tbsp blue food colouring
  • 7-10 Tbsp light blue love beads
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Cling film
  • baking paper
  • 2 Disposable piping bag

Directions

    Beat the soft butter and brown sugar until fluffy. Stir in syrup and egg well. Mix flour, baking soda, baking powder, salt and gingerbread spice and knead into the butter mixture. Shape into a ball, flour lightly and cover with foil and chill for about 1 hour. Roll out the dough on a floured work surface to a thickness of approx. 3 mm and cut out polar bears with a cookie cutter. Spread on 2 baking trays lined with baking paper and bake one after the other in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 8-10 minutes. Let the bears cool down.

    Mix egg white and icing sugar to a thick icing. Remove approx. 1/3 and stir the remaining icing a little thinner with lemon juice. Colour 1-2 tablespoons of the thick icing light blue with food colouring. Put the thick white and light blue icing into a disposable piping bag and cut off a small corner. Spray the light blue and white contours onto the polar bears, allow to dry a little and colour in with the thinner icing. Press light blue love beads as eyes into the cast and let dry. Then paint the polar bear with light blue noses and let them dry as well
