Ingredients

Servings: 4
  • 125 g Flour
  • 1 knife tip Baking Powder
  • 2 Eggs (size M)
  • 1/4 l Milk
  • 7-10 Tbsp Salt
  • 16 Plums
  • 40 g crunchy oats
  • 4 TABLESPOONS clarified butter
  • 2 stem(s) Mint
  • 4 TABLESPOONS Maple syrup

Directions

    Mix flour and baking powder. Add eggs, milk and salt and mix to a smooth dough. Leave to rise for about 10 minutes. Wash, halve and stone the plums. Roast the oat flakes in a pan without fat, remove.

    Heat 1 tablespoon of fat in a pan (20 cm Ø). Place 8 plum halves in the pan with the cut surface facing down, pour 1/4 of the dough over them. Fry over medium heat for 3-4 minutes, turning.

    Sprinkle with oatmeal. Fry for another 2 minutes. Keep pancakes warm. Fry another 3 pancakes in the same way. Wash the mint and cut some leaves into strips. Drizzle the pancakes with maple syrup and sprinkle them with mint strips and leaves and serve.
