Mix flour and baking powder. Add eggs, milk and salt and mix to a smooth dough. Leave to rise for about 10 minutes. Roast the grated coconut in a pan without fat, take it out. Wash apples, cut out core.
Cut apples into slices. Heat 1 tbsp. fat in a pan (20 cm Ø). Put 3 apple slices in the pan, pour 1/4 of the dough over them. Fry over medium heat for 3-4 minutes, turn. Sprinkle with grated coconut and put 1 tsp. cranberries in each apple ring. Fry for another 2 minutes. Keep pancakes warm.
