Buttermilk pancakes with spiced apples

Ingredients

Servings: 4
  • 500 g Apples (e.g. Boskop)
  • 2 TABLESPOONS Honey
  • 1/2 TEASPOON Cinnamon
  • 1/2 TEASPOON ground cloves
  • 50 g Sultanas
  • 3 TABLESPOONS Butter or margarine
  • 150 g Flour
  • 1 TEASPOON Baking Powder
  • 2 TABLESPOONS Sugar
  • 250 ml Buttermilk
  • 2 Eggs (size M)
  • 1 jar (170 g) clotted cream

Directions

    Peel and quarter apples, remove core. Cut quarter into slices. Boil up honey and 4 tablespoons of water. Season with cinnamon and cloves. Add sultanas and apples, bring to the boil and simmer for about 5 minutes until the apple is soft.

    For the dough, melt 1 tbsp of fat. Mix flour, baking powder and sugar. Add buttermilk and fat and mix to a smooth dough. Stir in eggs. Let it swell for at least 10 minutes.

    Heat a little fat in a pan and bake about 3 tbsp. of dough in it to a pancake. Keep finished pancakes warm. Do the same with the rest of the fat and dough and bake 8 pancakes in total.

    Arrange pancakes and apples with clotted cream.
