Kaiserschmarren with marinated strawberries

Ingredients

  • 2 Eggs (size M)
  • 1 TEASPOON Sugar
  • 1 pinch Salt
  • 200 ml Milk
  • 125 g Flour
  • 500 g Strawberries
  • 4 Stem(s) Peppermint
  • 4 TABLESPOONS Orange juice
  • 1 TABLESPOON Honey
  • 1 package Bourbon vanilla sugar
  • 10 g clarified butter
  • 1 TABLESPOON Icing sugar

Directions

    Separate eggs. Mix egg yolks, sugar, salt and milk with the whisk of the hand mixer. Sift flour on top and stir in. Let the dough swell for 10-15 minutes

    In the meantime, wash and clean the strawberries and, depending on their size, halve or quarter them. Wash peppermint, shake dry. Pluck the leaves from the stalks and chop them, except for something to decorate. Mix orange juice, honey, vanilla sugar and peppermint. Marinate strawberries with it

    Beat the egg white until stiff and fold into the dough in portions. Heat clarified butter in a pan (28 cm Ø). Add the dough and bake at low to medium heat for approx. 3 minutes from one side.

    Quarter the cake with a spatula. Turn each quarter and fry for another 2-3 minutes. Then tear up the cake with 2 forks. Serve the slices and strawberries. Dust with icing sugar
