Plum cake from the tray (diabetics)

Ingredients

Servings: 24
  • 100 g soft butter
  • 400 g Flour
  • 90 g Diabetic sweetness
  • 1 egg (size M)
  • 1 pinch Salt
  • 150 ml Milk
  • 1 cube (42 g) fresh yeast
  • 1.5 kg pitted plums
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Lemon balm to decorate

Directions

    Put butter, flour, diabetic sweetener, egg and salt in a mixing bowl at room temperature. Warm milk in a pot lukewarm, crumble yeast into it and mix well. Pour the yeast milk into the mixing bowl and knead everything into a smooth dough using the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 40 minutes. Knead the dough again well and roll out evenly on a greased, floured baking tray (32 x 38 cm). Cover and leave to rise in a warm place for about 20 minutes.

    Spread the plums on the yeast dough. Sprinkle with 15 g diabetic sweetness. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 30 minutes. Remove from the oven, place on a rack and allow to cool. Cut the cake into 24 pieces and arrange on a plate. Decorate with lemon balm

    You can exchange these ingredients: Prepare the yeast dough with 75 grams of sugar instead of diabetic sweetener. Sprinkle the plums with about 3 tablespoons of sugar instead of diabetic sweetness
