Kaiserschmarrn and fruit compote

Ingredients

  • 5 Oranges
  • 50 ml White wine
  • 75 g Sugar
  • 1 TEASPOON Cornstarch
  • 2 Bananas
  • 50 g Raisins
  • 8 Eggs
  • 1/4 l Milk
  • 7-10 Tbsp Salt
  • 200 g Flour
  • 4 TABLESPOONS Butter or margarine
  • 50 g roasted oats
  • 50 g roasted hazelnuts
  • 7-10 Tbsp Icing sugar

Directions

    For the compote, peel 2 oranges so that the white skin is completely removed. Remove the fillets from the parting skins. Squeeze the remaining oranges. Boil up with white wine and 25 g sugar.

    Stir cornstarch with a little water until smooth and stir into the juice. Bring to the boil. Peel and slice the bananas. Fold orange fillets and bananas into the compote and let cool. For the Kaiserschmarrn, wash and drain the raisins.

    Separate eggs. Beat the egg yolks, remaining sugar, milk and salt until creamy. Gradually stir in the flour. Beat the egg whites until stiff and carefully fold into the egg mixture with the raisins. Heat 1 tablespoon of fat in a large pan.

    Add 1/4 of the dough and fry over medium heat on both sides until golden brown. Break into large pieces with the help of 2 forks and keep warm. Process the rest of the dough in the same way. Serve sprinkled with roasted oat flakes and hazelnuts.

    Dust with icing sugar. Add compote.
