For the vinaigrette, whisk vinegar, 2 tablespoons of water, salt, pepper, mustard and honey. Add oil drop by drop. Peel onions and cut into rings. Clean and wash the salad and spin dry with a salad spinner. Mix salad, sausage, onion rings and capers. Pour into glasses and drizzle with dressing. Garnish with caper apples
