Drain the mozzarella and cut into slices. Wash the tomatoes and cut out the stem. Cut the fruit flesh into thick slices. Peel and quarter garlic. Chop the chilli pepper. Wash basil, dab dry.
Pluck leaves from the stems. Layer mozzarella, tomatoes and basil leaves in a glass. Mix olive oil, chili, garlic, a little salt and pepper and pour over. Cover and leave to stand overnight. Garnish with chilli pepper. Serve with fresh white bread
