Wash the basil, drain well. Pluck the leaves from the stems and cut them into strips. Peel garlic and chop roughly. Grate the Parmesan finely.
Finely puree basil, garlic, cheese and pine nuts with the chopping stick of the hand mixer (or in the universal chopper). Gradually add the oil. Season to taste with salt. Tastes good with pasta, steamed fish or hard-boiled eggs
