Pears and peaches in caramelized peach sauce

Ingredients

Servings: 4
  • 2 medium ripe pears
  • 80 g Sugar
  • 7-10 Tbsp Juice of 1 lemon
  • 1 Vanilla pod
  • 1 can(s) (425 ml) Peach halves
  • 7-10 Tbsp Chocolate flakes
  • 7-10 Tbsp Mint

Directions

    Peel and halve the pears and remove the core. Bring 3/8 litres of water, 30 g sugar, lemon juice and vanilla pod to the boil. Steam the pear halves for 5 minutes, then drain.

    Drain the peaches on a sieve, collecting the juice. Put the remaining sugar in a pot and let it caramelize. Add the peach juice while stirring and stir until the sugar is dissolved.

    Let the peach caramel cool down. Cut 2 peaches into slices. Cut the pears fan-like. Arrange the pears, 1 peach half and some slices on a plate. Spread sauce over them. Sprinkle with chocolate shavings.

    Decorate with mint.
