Pear-rocket salad with blue cheese and walnuts

Ingredients

  • 80 g Walnut kernels
  • 1 TEASPOON Oil
  • 5 discs Bacon
  • 3 TABLESPOONS dark balsamic vinegar
  • 1 TABLESPOON Honey
  • 6 TABLESPOONS mild olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper from the mill
  • 125 g Rocket
  • 1 red onion
  • 2 ripe pears
  • 100 g Blue cheese (e.g. Saint Agur)

Directions

    Break the nuts into smaller pieces or chop them roughly and roast them in a pan without fat until golden brown. Let them cool down on a flat plate. Brush a large coated pan with oil. Place slices of bacon side by side in the pan and fry over medium heat for 4-5 minutes until crispy, turning.

    Drain on kitchen paper.

    For the vinaigrette, mix vinegar and honey in a bowl. Fold in the oil in a thin stream until you have a thick vinaigrette. Season to taste with salt and pepper. Clean, wash and spin dry the salad and chop it smaller if necessary.

    Peel the onion and slice into very fine rings. Pears wash, dry grate and quarter. Remove the core, cut the quarters into thin slices.

    Crumble cheese, break bacon into large pieces. Mix salad, onion, pears and nuts in a bowl. Arrange on plates. Arrange bacon and cheese on top. Drizzle salad with vinaigrette.
