Clean, wash and spin dry the picking salad and pluck into bite-sized pieces. Cut mozzarella into large pieces. Wash figs, dab dry and cut off the stalks. Cut the fruits into quarters or sixths depending on size.
Mix vinegar with salt, pepper and 1 pinch of sugar. Fold in the oil. Mix all salads, figs and mozzarella with the vinaigrette.
Arrange Bündner Fleisch on the salad. Nut baguettes are delicious with it.
