Pear in wine froth with chocolate ice cream

Ingredients

  • 1 untreated lemon
  • 250 ml dry white wine
  • 3 TABLESPOONS Sugar
  • 1 Cinnamon stick
  • 4 Pears (e.g. Williams)
  • 150 g Whipped cream
  • 40 g Dark chocolate coating
  • 1 Egg Yolk
  • 4 balls of chocolate ice cream
  • 7-10 Tbsp Mint leaves

Directions

    Wash lemon warm, rub dry. Peel the peel with a peeler. Halve the lemon, squeeze the juice. Boil up wine, sugar, cinnamon stick, 250 ml water, lemon peel and juice. Meanwhile peel and halve the pears, remove the core with a ball cutter. Add pears to the wine stock and poach for about 15 minutes. Remove pears and lemon peel, boil down the stock for another 15 minutes (to approx. 125 ml).

    Leave to cool a little. In the meantime whip cream until semi-stiff. Cut the chocolate coating with a knife into long chocolate chips. Put the lukewarm wine stock and egg yolk into a metal bowl and whip until frothy on a hot water bath for about 5 minutes. Fold the cream into the wine mousse. Arrange 2 pear halves each with wine mousse and 1 scoop of chocolate ice cream. Decorate with mint leaves and chocolate shavings
