Eggnog parfait on strawberry carpaccio

Ingredients

  • 2 Eggs (size M)
  • 1 package Vanillin sugar
  • 20 g Sugar
  • 50 ml Egg liqueur
  • 150 g Whipped cream
  • 14 Strawberries
  • 2 TABLESPOONS crushed pistachio kernels
  • 7-10 Tbsp Melissa

Directions

    Separate eggs. Whisk the egg yolks, vanilla sugar and sugar with the whisk of the hand mixer in a high mixing bowl for approx. 5 minutes until white and creamy. Add egg liqueur bit by bit. Beat egg whites and cream separately until stiff. Fold one after the other into the egg yolk mixture. Pour the parfait mixture into 4 small moulds (approx. 150 ml content) and freeze for at least 4 hours. Wash 2 strawberries and set aside.

    Clean and wash the remaining strawberries, dab dry and cut into very thin slices. Arrange the strawberry slices close together on 4 plates. Dip parfait cups in hot water, loosen the rim with a small knife and turn parfaits out onto the plates. Let thaw for 5 minutes. In the meantime quarter the remaining strawberries. Sprinkle carpaccio and parfait with pistachios, decorate with strawberry quarters and lemon balm
