Rice Pudding Red Groats Ice Cream

Ingredients

Servings: 4
  • 250 ml Milk
  • 500 g Whipped cream
  • 1 pinch Salt
  • 75 g Rice Pudding
  • 1 package Vanillin sugar
  • 60 g Sugar
  • 400 g red fruit pudding

Directions

    Bring milk, 250 g cream and salt to the boil. Add rice, vanillin sugar and sugar, bring to the boil while stirring and allow to swell at low heat for about 30 minutes, stirring occasionally. Remove from heat and let rice pudding cool down while stirring several times

    Whip 250 g cream until stiff. Fold into the cooled rice pudding. Pour about half of the mixture into an ovenproof dish or cake tin. Put about 2/3 of the red fruit jelly in blobs on top. Spread the rest of the rice pudding and groats on top. Freeze for at least 4 hours. Take out approx. 30 minutes before eating
