Wash and quarter the pears and remove the core. Cut pears into slices. Mix honey, lemon juice and pear brandy and marinate the pear slices for about 30 minutes. Put milk and cream in a mixing bowl. Stir in sauce powder with a whisk.
Whip vigorously and quickly for about 1 minute. Roughly chop the chocolate. Arrange pear wedges and vanilla sauce on dessert plates and sprinkle with chocolate pieces. Serve decorated with lemon balm as desired
