Mix egg yolk and fat in a bowl. Stir in mineral water. Mix flour, baking powder, sugar and salt and stir into the mixture. Spread a coated pan very thinly with oil.
Form the dough into 3 pancakes and cover each with a pear wedge and 1/2 teaspoon cranberries. Bake the pancakes on each side for about 2 minutes until golden brown. Arrange the remaining cranberries on a plate and decorate with mint.
