Peach and melon chutney

Ingredients

  • 250 g Peaches
  • 1/2 (approx. 500 g) Galia melon
  • 100 g red onions
  • 8-10 Stem(s) fresh thyme
  • 100 ml White wine vinegar
  • 125-150 g demerara sugar
  • 1 TABLESPOON pickled green peppercorns
  • 1 TEASPOON Salt
  • 7-10 Tbsp Cayenne pepper
  • 1 green pepper panicle for garnishing

Directions

    Carve peaches crosswise, briefly boil water over them and rinse them under cold water. Peel the skin off the peaches, cut the peaches in half, remove stones. Cut the fruit into small cubes. Remove the seeds from the melon, peel the flesh from the skin and also cut into cubes. Peel and finely dice the onions. Wash the thyme, dab dry and chop the leaves, except for something to garnish.

    Put the fruit, onions, vinegar, brown sugar, thyme, peppercorns, salt and a little cayenne pepper in a pot. Bring to the boil while stirring and simmer in an open pot for 25-30 minutes. Stir from time to time. Season finished chutney with salt and pepper again and let it cool down. Serve garnished with thyme and pepper panicle as desired
