Pasta salad with tomatoes and ham

Ingredients

  • 250 g Maccheroni (short macaroni noodles)
  • 7-10 Tbsp Salt
  • 300 g frozen princess beans
  • 400 g cherry tomatoes
  • 50 g dried, pickled tomatoes
  • 1 medium onion
  • 5-6 Tbsp Essig White Balsamic
  • 7-10 Tbsp Pepper
  • 6 TABLESPOONS Olive oil
  • 30-40 g sliced parmesan cheese
  • 1 collar Rocket (50-60 g)
  • 80 g air-dried ham in thin slices

Directions

    Put the noodles in plenty of boiling salted water and cook for about 7 minutes until they are bubbling. Bring 1/8 litre water to the boil, add frozen beans and bring to the boil. Cover and cook for 4-5 minutes, stirring several times. Pour the pasta onto a sieve, rinse with cold water, drain and allow to cool. Pour the beans onto a sieve as well, drain and let them cool down.

    Wash and halve the tomatoes. Drain dried tomatoes and cut into fine strips. Peel onion and cut into thin slices. Mix vinegar, salt and pepper and add oil. Stir in onion slices and mix the vinaigrette with pasta, beans, cherry tomatoes and dried tomatoes. Add half of the sliced Parmesan cheese and leave to soak for about 30 minutes. Clean the rocket, wash and drain well. Halve the ham slices or cut them into wide strips. Season salad with salt and pepper.
