Mix cream and lemon juice. Season dressing with salt and pepper. Cut cucumber lengthwise in half and remove seeds. Cut cucumber halves into slices. Cut spring onion into rings. Wash the meat, dab dry and cut into small pieces. Heat oil in a pan.
Fry the meat for about 3-4 minutes while turning. Season with salt and pepper. Cut out orange and grapefruit fillets between the dividing skins. Mix salad, cucumber, spring onion, citrus fillets and cream dressing. Spread the meat on the salad. Sprinkle with chives if necessary. Serve with wholemeal bread
