Apple and white cabbage salad

Ingredients

  • 1 Head (approximately 500 g) White cabbage
  • 7-10 Tbsp Salt
  • 2 Carrots
  • 3 Apples
  • 7-10 Tbsp juice of 1/2 lemon
  • 2 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1-2 TABLESPOONS Oil
  • 150 g Fresh cream
  • 4 TABLESPOONS Salad mayonnaise (50% fat)
  • 1 collar Dill

Directions

    Clean and wash the cabbage and cut into fine strips. Mix cabbage and 1 teaspoon of salt. Mash with a potato masher or wooden spoon until the cabbage is slightly glassy. Then cover and leave to soak for 30 minutes.

    Peel and wash the carrots and cut them into fine sticks. Wash apples. Halve 1 apple, cut off 2 thin slices, sprinkle with some lemon juice and put aside. Halve remaining apples, remove core and cut the apple halves into thin slices.

    Season vinegar with salt, pepper and sugar. Stir in the oil. Pour over the prepared salad ingredients and mix loosely. Mix crème fraîche and mayonnaise. Season with salt, pepper and remaining lemon juice.

    Wash the dill, dab dry and, except for something to garnish, cut finely and stir into the sauce. Arrange salad with dill in a bowl. Add the sauce. Pumpkin seed bread tastes good with it.
