Clean and wash salads. Clean, wash and roughly grate carrots. Celery clean, wash and cut into very fine sticks. Wash the orange hot and tear off the skin with a julienne chewer.
Squeeze orange. Mix salad cream with orange juice and julienne until smooth. Season to taste with salt, pepper and sugar. Mix grated carrots and celery sticks and arrange on plates with the salad leaves.
Pour salad cream over the salad. Garnish with parsley.
