Greek noodle salad with feta cheese

Ingredients

  • 250 g short macaroni
  • 7-10 Tbsp Salt
  • 1/2 TEASPOON medium hot mustard
  • 5 TABLESPOONS Orange juice
  • 2 TABLESPOONS Olive oil
  • 1 collar Thyme
  • 1/2 Cucumber
  • 4 Tomatoes
  • 1 package (150 g) Sheep's cheese (light)
  • 40 g black olives (without stone)
  • 7-10 Tbsp coarse pepper

Directions

    Cook the pasta in boiling salted water according to the instructions on the packet. In the meantime, mix 1 teaspoon of salt, mustard and orange juice. Gradually fold in olive oil. Wash thyme and shake dry.

    Pluck leaves from the stems, except for a few for garnishing. Add to the vinaigrette and fold in. Drain the pasta and rinse with cold water. Mix immediately with the vinaigrette and leave to stand.

    In the meantime, wash the cucumber, quarter it, remove the seeds and cut into cubes. Tomatoes wash, dry grate, halve and cut into slices. Cut cheese into cubes. Drain olives, drain and cut into rings.

    Add prepared ingredients to the noodles and mix carefully. Serve garnished with remaining thyme. Sprinkle with coarse pepper.
