Roast the sunflower seeds in a pan without fat and let them cool down. Wash the cherry tomatoes, dab dry and cut into quarters. Mix vinegar, salt and pepper and add oil. Mix vinaigrette, sunflower seeds and tomatoes. Clean the rocket, wash and drain well.
Wash and drain the sprouts as well. Cut the rocket, except for a few young leaves for garnishing, into strips and mix with the sprouts. Arrange the lettuce on plates and spread the tomato vinaigrette on top. Sprinkle with sliced Gouda and serve garnished with rocket
