Asparagus-strawberry salad

Ingredients

  • 250 g white and green asparagus
  • 7-10 Tbsp Salt
  • 250 g Pointed cabbage
  • 250 g Strawberries
  • 3 TABLESPOONS Raspberry vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 5 TABLESPOONS Oil
  • 50 g Parmesan cheese
  • 7-10 Tbsp Chervil leaves

Directions

    Wash and peel the white asparagus and cut off the woody ends. Wash the green asparagus, cut off the woody ends and peel the asparagus at the bottom. Cut the asparagus partly into pieces.

    Cook the white asparagus pieces for about 15 minutes in boiling salted water. Add green asparagus after 5 minutes cooking time and cook along. Drain and rinse with cold water. Clean the pointed cabbage, cut into strips and wash.

    Wash, clean and slice the strawberries. Mix vinegar, salt and pepper. Whip the oil into it. Mix asparagus, cabbage and strawberries. Pour over the marinade and let it stand for about 30 minutes.

    Arrange the salad on a plate. Sprinkle with coarsely grated parmesan and chervil leaves.
