Soak gelatine in cold water. Cut the passion fruit in half and remove the inside of the fruit with a spoon, set aside 2 tablespoons. Warm up the condensed milk in a pot. Squeeze the gelatine, add to the condensed milk and dissolve. Chill for about 5 minutes until the mixture starts to gel
Stir the passion fruit into the condensed milk. Whip 200 g cream with the whisk of the hand mixer. Fold in 2 portions of cream, immediately pour cream into 4 dessert bowls (220 ml each) and chill for approx. 1 hour. Whip another 75 g of cream, pour a dollop of cream onto each bowl and decorate with passion fruit and lemon balm.
