Parma rolls with melon

Ingredients

Servings: 4
  • 3 TABLESPOONS white balsamic vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Honey
  • 2 TABLESPOONS Olive oil
  • 1 Shallot
  • 1 Honeydew melon
  • 6 sheets Oak leaf salad
  • 1/4 collar Rocket
  • 8 discs Parma ham

Directions

    For the vinaigrette, whisk vinegar, salt, pepper and honey. Beat the oil into the vinaigrette drop by drop. Peel the shallot, cut into fine cubes and stir into the vinaigrette. Halve the melon, remove seeds, cut off 4 slices and cut the flesh from the skin.

    Use the rest of the melon for other purposes. Halve the slices. Clean, wash and shake the salad dry and cut into strips, except for some rocket for garnishing. Place the ham slices next to each other. Spread the lettuce on top, drizzle with some vinaigrette, wrap around 1/2 melon slices each, cut in half and arrange on a plate.

    Garnish with rocket. Baguette bread tastes good with it.
