Halve the vanilla pods lengthwise and scrape out the pulp. Mix oat flakes, chia seeds and almond drink and season with half of the vanilla and cinnamon. Let the oat chiadrink steep overnight.
Peel apples, quarter them and cut out the core. Cut the flesh into large cubes. Heat oil in a wide saucepan. Steam apples for 2-3 minutes. Add apple juice and remaining vanilla. Simmer apple compote for about 10 minutes at medium heat. Season to taste with agave syrup.
Put half of the compote into a high mixing bowl and puree with a hand blender. Mix the puree with the remaining compote and let it cool down. Roughly chop the nuts. Roast in a pan without fat while turning, remove. Layer compote and oat chia pudding alternately in 4 glasses (each with a capacity of approx. 250 ml). Decorate with nuts and one cinnamon stick each.
