For 4 persons preheat the oven (electric cooker: 200 °C/circulating air: 180 °C/gas: see manufacturer). Line a baking tray with baking paper. Separate 4 eggs (size M), leaving aside the yolks in the halves of the shells (e.g. in the egg cardboard). Beat the egg white until stiff. Fold in 1 tbsp.
grated Parmesan cheese. Spread the beaten egg white in 4 heaps on the tray. Use a tablespoon to press hollows in the middle. Bake in a hot oven for about 6 minutes. Slide the egg yolks into the wells and bake for about 3 minutes. Season with pepper.
Also tastes good sprinkled with herbs on toasted bread with crispy bacon.
