Orzo pasta salad with broccoli and tomatoes

Ingredients

Servings: 8
  • 400 g rice shaped noodles (e.g. Orzo or Kritharaki)
  • 7-10 Tbsp salt, pepper
  • 500 g Broccoli
  • 3 ripe bottle tomatoes
  • 1 collar flat leaf parsley
  • 250 g Whole milk yoghurt
  • 3 TABLESPOONS good olive oil

Directions

    Cook the pasta in 4-5 l boiling salted water (1 teaspoon salt per litre) according to the instructions on the packet. Clean broccoli, cut into small florets, wash. Add to the noodles about 4 minutes before the end of the cooking time, cook along.

    Drain everything, rinse with cold water and let it cool down.

    Meanwhile wash the tomatoes and dice them roughly. Wash parsley, shake dry, pluck the leaves and chop them coarsely. Mix yoghurt and olive oil. Season to taste with salt and pepper.

    Mix pasta, broccoli, tomatoes, parsley and yoghurt sauce. Season to taste again.
