Caramelise the sugar slowly in a wide pot at low temperature. Deglaze with cream, simmer until the caramel is completely dissolved. Add orange juice and Grand Manier, bring to the boil briefly and then allow to cool. Pour the liqueur through a sieve and pour into a carafe and store in a cold place. Shake before use
