Peel onions and garlic and, except for some onion for garnishing, cut into fine cubes. Heat the oil. Sauté onion and garlic cubes in it until translucent. Wash the herbs and shake dry.
Pluck leaves or needles from the stems or twigs and chop finely. Sweat the herbs for about 1 minute. Cut cheese into cubes. Remove onions from the stove. Stir in cheese and herbs.
Season to taste with salt, honey and chilli flakes. Serve and garnish with the remaining onion.
