Peel carrots and celery and cut into small cubes. Peel and finely dice onion and garlic. Heat the oil in a pot. Fry carrots, celery, onions and garlic in it.
Add the tomatoes and chop a little. Add tomato paste and red wine, bring to the boil. Season with salt, pepper and oregano. Let it boil down at medium heat for 5-10 minutes. Cook pasta in boiling salted water for 10-12 minutes.
Cut the ham into small cubes and add to the tomato sauce at the end. Season to taste again. Quench the pasta and drain. Arrange noodles and tomato sauce in deep plates. Sprinkle with parmesan and serve garnished with oregano leaves.
