Ingredients

  • 1 glass (720 ml) Cherries
  • 150 g Butter or margarine
  • 150 g Sugar
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 4 Eggs (size M)
  • 300 g Flour
  • 2 TABLESPOONS Coconut flake
  • 1 package Baking Powder
  • 4 TABLESPOONS Whole milk yoghurt
  • 2 TABLESPOONS Coconut liqueur
  • 250 g Icing sugar
  • 1 Protein (size M)
  • 1-2 TABLESPOONS Lemon juice
  • 7-10 Tbsp red food colouring
  • 6-7 Happy News
  • 24 Paper sleeves
  • 7-10 Tbsp Fat and flour

Directions

    Place the cherries in a sieve and drain. Cream fat, sugar, salt and vanilla sugar with the whisk of the hand mixer. Stir in the eggs one after the other. Mix flour, grated coconut and baking powder and stir into the dough alternately with the yoghurt. Carefully fold in the cherries. Line a muffin tray (12 troughs) with 2 paper sleeves each and fill in the dough. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 20-25 minutes.

    Remove the tray from the oven. After about 10 minutes, turn the muffins onto a cake rack and let them cool down. Sift icing sugar into a bowl. Add egg white and lemon juice and mix to a thick icing. Colour the icing pink with food colouring and pour it over the cooled down muffins by the spoonful. Let the muffins dry. Decorate with lucky messages
