Mini muffins with spinach

Ingredients

Servings: 20
  • 150 g fresh spinach
  • 1 TEASPOON +
  • 100 g Breakfast bacon in strips
  • 250 g Flour
  • 1 heaped Tsp baking powder
  • 2 Eggs (size M)
  • 200 ml Milk
  • 200 g grated Comte cheese (or Fribourg, or Beaufort)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Wash and clean the spinach and shake dry. Heat 1 tsp. oil in a pot. Add the spinach and let it fall together. Take it out, let it drip off a little, spread it out on a plate and put it in a cool place. Squeeze the cold spinach and cut it into small pieces

    drain the bacon strips crisply in a pan without fat, take them out and let them drip off on kitchen paper

    Mix flour and baking powder in a bowl. Press a depression in the middle and add eggs, milk and oil and mix. Mix in spinach, bacon and grated cheese and season with some salt and pepper

    Grease the cavities of a mini muffin tin (20 cavities) and dust them with flour. Spread the dough into the troughs. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for 20-25 minutes. Serve lukewarm or cold
