Peel and finely dice the shallot. Clean, wash, dab dry and finely chop the pepperoni. Heat 2 tablespoons of oil in a frying pan. Fry the shallot, pepperoni, bay leaf and minced meat for 4-5 minutes, turning.
Season with salt and pepper. Add the tomatoes, chop them with a spatula. Simmer covered for about 45 minutes. Peel onion and cut into rings. Peel, wash and slice the carrots.
Clean, wash and cut the peppers into strips. Cook the pasta in boiling salted water according to the instructions on the packet. Heat 2 tablespoons of oil in a frying pan. Fry the vegetables in it over a low heat for about 10 minutes, turning occasionally.
Mix the minced sauce and vegetables, season to taste with salt, pepper and a little sugar. Drain the pasta and let it drain. Arrange minced sauce and noodles.
