Meringue cake with cranberry cream

  • 75 g ground almonds
  • 50 g sliced almonds
  • 225 g Flour
  • 375 g Sugar
  • 2 packages Vanillin sugar
  • 7-10 Tbsp Salt
  • 150 g Butter
  • 1 egg (size M)
  • 5 Protein (size M)
  • 400 g Whipped cream
  • 100 g Schmand
  • 250 g thickened cranberries (glass)
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Roast ground and sliced almonds one after the other in a pan without fat, take them out and let them cool down. For the short pastry, put flour, ground almonds, 75 g sugar, 1 packet vanilla sugar, 1 pinch of salt, butter and egg into a mixing bowl and knead into a smooth dough with the dough hooks of the hand mixer. Roll out to a rectangle (40 x 25 cm) on slightly floured baking paper. Chill for about 30 minutes. Place on a baking tray.

    Bake in the preheated oven (electric range: 200 °C/ convection oven: 175 °C/ gas: level 3) on the middle shelf for 10-12 minutes. Whisk the egg white with the whisk of the hand mixer until stiff, adding 250 g sugar. Beat until the sugar has dissolved. Take the cake out of the oven, spread the meringue loosely on the shortcrust pastry. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 8 minutes. Remove and let cool on a cake rack. Whip cream until stiff. Mix sour cream, 50 g sugar, 1 packet of vanilla sugar and 200 g cranberries well and carefully fold into the cream. Spread the cranberry cream over the meringue.
